Q: What inspired your culinary career?
A: My girlfriend.
Q: Tell us about your culinary journey.
A: My adventure began in 1996 in the African bush, where my love for food and nature intertwined. I’ve explored African cuisines, worked at food festivals in Jeddah and Riyadh, and embraced Middle Eastern and Argentinian flavors. Returning to South Africa, my journey led me to Christie’s, where I aim to create unforgettable dining experiences.
Q: A favorite kitchen memory?
A: One highlight was when Tierney from the Reserve Bank fell in love with my duck with cherry sauce, ordering it daily for breakfast over four days! Moments like these remind me of the joy food brings.
Q: Any signature dishes or new ideas for the menu?
A: Yes! We’re launching the Chef’s Choice Special, a monthly surprise dish using seasonal ingredients to keep the dining experience fresh and exciting.
